In Celebration Of Craft
Rich and complex, the 2024 Tsukuriwake Selection makes an easy and delicious accompaniment to Chef Kazu’s exquisite cuisine. His strong ties with produce vendors in Japan ensure a constant supply of the freshest ingredients brought to bear in Hamamoto’s menus.

Seasonal hairy crabs, or Hokkaido kegani, are a sought-after signature. Chef Kazu shells the crab legs at the counter before poaching their delicate flesh for mere seconds in a flavourful crab stock that has been brewing for as long as Hamamoto has been open.

Another irresistible signature is the Ise Ebi sashimi, or Japanese spiny lobster, set on its shell and crowned with premium uni and Kaluga caviar.
